Golden Mushroom Chili Dip (นํ้าพริกเห็ดเข็มทอง)

Today 's recipe is Golden Mushroom Chili Dip (นํ้าพริกเห็ดเข็มทอง)because it's been a while since I posted dip recipes on Taste of Siam. This tasty mushroom dip is my go to recipe whenever I want to lose some weight. This dip is very light, naturally low in fat yet delicious and full of flavors. Besides that,the recipe is fast to whip up and you don't have to babysit for 1-2 hours, easy breezy.    

I choose golden mushroom but you sure can use almost any mushroom you like. The dip goes great with fried fish and boiled eggs. Try the recipe out, you 'll know it's always so much fun to eat better and healthier, with only the simplest of ingredients.


Below is my Golden Mushroom Chili Dip recipe. 


Ingredients 
a handful of golden/enoki mushroom (170 grams), chopped away the root, wash and rinse
2 medium size shallot, toasted 
5 red chili peppers, toasted 
7 dried chili peppers, toasted 
3 cloves Chinese garlic, toasted 
1 teaspoon chili powder 
1 teaspoon palm sugar
1 tablespoon tamarind concentrate 
1.5 tablespoon fish sauce 

Preparation 
1. Boil the mushroom until is cooked, drain well, set aside. 
2. With a mortar and a pestle, pound chili peppers, dried chili peppers, shallots, garlic and palm sugar until break into small pieces and well combined. 
3. Add in golden mushroom, pound lightly. Season with fish sauce, tamarind concentrate and chili powder, serve with steamed rice.
