Spicy Fried Morning Glory (ยําผักบุ้งกรอบ)


Morning Glory is a climbing vine that grows around the world -- and it is a damn tasty food. I love morning glory and have cooked it thousand ways  and it turns out amazing every time

I speak from experience, morning glory is good with curry, stir fry, chili dip and noodles dishes. And if you have a little more time to cook (probably on weekend), I would recommend spicy deep fried morning glory -- one of the best ways to enjoy this wonderful long stem weed.  I bet you wouldn't  say no to this, especially if you love fried food. 

Cooking spicy fried morning glory is pretty easy but you would need more time and effort to deep frying. For the the dressing, I usually stick with tamarind concentrate, fish sauce, roasted Thai chili paste, palm sugar, shallot and chilies, basic ingredients in Thai cuisine, --that usually stocked in my pantry. Adding shrimp to the dressing is optional, and can be left out completely.      

I hope you enjoy making and having this spicy fried morning glory with your love ones. Below is my spicy fried morning glory recipe. 


Ingredients 
100 grams morning glory (ผักบุ้ง) cut into bite size pieces
for the batter 
cake flour 1/2 cup 
rice flour (แป้งข้าวจ้าว) 1/2 cup
mung bean flour (แป้งถั่วเขียว) 1/2 cup 
2 tablespoon coconut milk
300 ml. icy cold water 
1/2 teaspoon baking powder 
1 egg yolk 
1/2 teaspoon salt 

for the dressing 
80 grams ground pork  
15 medium size shrimp, shelled, de-vein
50 ml. water 
2 tablespoon fish sauce 
1 tablespoon palm sugar 
1/2 tablespoon Thai roasted chili paste (นํ้าพริกเผา) 
1.5 tablespoon tamarind concentrate (นํ้ามะขามเปียก) 
4 medium shallots, thinly sliced 
4 red chili peppers  (พริกขี้หนูแดง), thinly sliced  

canola oil for deep frying 
Preparation 
 1. Bring water into a boil, cook ground pork until is done. Then add in shrimp and cook it until just about done. A minute or two -- depends on its size. I 'd like to remove it from the heat when it is still undercooked slightly. The residual heat will keep cooking it and it will be perfect when I get to assemble the dish.  
 2. Add in the rest of dressing ingredients and mix well. 

 3. When you are ready to deep fry your morning glory, mix all the batter ingredients in the mixing bowl. You will get a rather thick batter. Then heat a pot of oil, deep fry morning glory over medium high heat. You can deep fry 4-5 pieces of morning glory at a time depending on the size of your pot, but please be careful not to overcrowd your pot. 


 3. Ladle the dressing over fried morning glory, serve with steamed rice.
