Thai Style Fried Oysters (Hoi Tod)



I have to admit.. I don't really like oysters, especially the raw ones. They have the textures that, frankly, I can't handle. The only way for me to enjoy these slippery shellfish is to hide them in the scrumptious thick batter and fry them. To me, fried oysters are splendid thing and super delicious. Am I confuse you a bit? 

To cook the dish, I mix rice flour and cassava starch with some water. Then fry it with the oysters in very hot oil. The crunchy outside but soft chewy on the inside of the batter disguises what is otherwise too slimy for me to handle. So Thai Style Fried Oysters is a good way for someone like me to enjoy the oysters. 

Thai style fried oysters vendors in Thailand commonly serve their oysters with a bowl of savory sauce made by mixing Thai sweet chili sauce with chili sauce. But the sauce is up to what you like and is practically limitless, and you can enjoy these fried oysters without any sauce. 

The recipe I am going to share with you has been tested and re- done for many times with more than satisfying results. I am sure you would welcome a plate of this delightful Thai Style Fried Oysters.  Enjoy!     


      Thai Style Fried Oysters Recipe

Ingredients 
Yields 2 servings Clock30 minutes

140 grams oysters
for the batter 
3 tablespoon cassava starch (แป้งมัน) 
1 tablespoon rice flour (แป้งข้าวเจ้า)
5 tablespoon water 
1/2 teaspoon Thai light soy sauce (ซอสถั่วเหลือง)
                                     1 stalk spring onion, sliced 
                                                             1 egg 


                                                  for the sauce 
                                Thai sweet chili sauce, Chili sauce 1:1

                                 5 tablespoon canola oil for frying 
                                              some bean sprouts

Preparation 
1. Combine the cassava starch, rice flour , light soy sauce and water in a small bowl. Then add in spring onion. You will get rather loose batter. Add in oysters.
 2. Heat oil in the pan, preferably with a flat base. When the oil is very hot, pour in the batter. 


 3. Let cook undisturbed for about 20 seconds or until the batter becomes opaque. Then crack in an egg. 
  4. Break up the batter with a spatula, flipping the batter, cook until golden crispy. Remove from heat. 
5. Heat some oil on the pan, add in bean sprouts. Stir fry for 10 seconds. Serve with fried oysters. 

6. Now you  have a plate of tasty, fresh off the kitchen, fried oysters right in front of you. Enjoy!
