Crab Dip

I present to you my favorite dip : crab dip( Lon Poo). It is made with crab meat, coconut milk and spiced up with long fed chili peppers. The saltiness of crab meat enhances the richness of coconut milk. The long fed chili peppers sneak up on you, hitting your taste buds when you least expect it, sending some heat to your palate. You gonna love it. 


Coconut milk is delicious rich creamy food filled with minerals. I rarely go a day without having it....just love it.  We all have our guilty pleasure(s). So coconut milk and crab, how good is it? 

This crab dip is so easy to make. You just have all the ingredient ready and cook them all in one pot. Easy. Breezy.  Serve this dip with some fresh or boiled greens and steamed rice.   

                                                                       Ingredients 
                                                         Yields 3-4 serving Clock30 minutes 


1/4 cup blue crab meat 
2 shallots, sliced thinly
250 ml. coconut milk 
1 teaspoon salt
1/2 teaspoon sugar 
3 tablespoon tamarind concentrate 
2-3 kaffir lime leaves 
1 long fed chili pepper, cut into bite size pieces

Preparation 
 1. Bring about 100 ml. of coconut milk to the boil. Add in shallots and crab meat. Cook until    they are done.

 2. Then add in the rest of coconut milk. Season with salt, sugar and tamarind concentrate. Cook over medium heat until the sauce is thicken, then add in long fed chili pepper and tear in kiffir lime leaves. Stir to combine. Serve hot.

OMG this looks delicious!! I love that coconut milk is in this. I cannot get enough of coconut flavor. :)
