Coconut Sweet Rice with Mango

Mango, known as "Ma-muang" in Thai is one of Thailand's premier tropical fruits and Thailand produces some of the most delicious mangoes in the world. 


Thais are very fond of mango, the green and ripe for anytime snack. We like to thinly slice the green mango and dip the crisp slices in the sweet dip made of fish sauce and palm sugar. Another popular dish is green mango spicy salad or "Yam Ma-muang" in Thai. It is the tasty salad that will blow you away with its taste bud awakening flavors. 

    
My kid loves mango and anything with mango : mango ice cream, mango lassi, mango cake, mango pudding,  mango shake, ect.  
 Every time I bought mangoes, he didn't leave me much.


There are a lot of many different ways to savor mango, and every way is delicious.
But, frankly for me there is only successful recipe so far: Coconut Sweet Rice with Mango, "Kao Niaw Ma -muang" 


Below is my delicious and quick coconut sweet rice with mango recipe. 
Ingredients 
one ripe mango
1 pack instant sweet rice/sticky rice (200 grams)
100 cc. coconut milk
3 tablespoon sugar
1/2 teaspoon salt
sesame 


Method

  • Heat the coconut milk over the medium heat, add in sugar, salt. Stir until the salt and sugar dissolve completely. 
  • Heat the sweet rice in the microwave for 2 minutes or according to manufacturer 's instruction.
  • Pour the coconut milk into the sweet rice, cover and let stand for 30-40 minutes or until most of the coconut milk is absorbed by the sweet rice  



Now, my favorite part, slice mango!
  • Then slice the mango lengthwise along the flat side next to the seed. 
  • Turn the mango over and repeat on the other side. Now you should have 2 slices and the thick slice containing seed. You can use the paring knife to slice off any remaining  mango meat on the seed. This is nice to snack on while you 're cutting the rest of the mango. :-) 
  • With a small pairing knife, carefully slice mango into cubes without cutting through the skin.
  • Then with you thumb, press the mango inside out.


  • Now place the mango along with coconut sweet rice, sprinkle with sesame.

That's so convenient that you can get thai rice already pre-cooked! I didn't know there is such an easy packaged thai rice nowadays. It's so Japanese that we rely on packaged convenient cooked rice (for International food). Your coconut sweet rice with mango looks good!!
